It's 5am, you're already late for your gym class, you're pretty much starving (because, let's face it...you haven't eaten in over 10 hours), and you can't find the only clean pair of tights you have left. Well, sista, this was my life. Until I made two decisions. I decided to;
A, wake up earlier (so I could actually put my shoes on before I left the house),
and B, that I will always have snacks prepared.
I have an early morning love affair with this loaf...it gets me out the door on time, fuels me for my workout and doesn't leave me feeling bloated, or even worse...hangry. I can't wait for you to try!
What You Need;
1/2 cup buckwheat flour
3/4 cup almond meal
1/4 cup coconut flour
1 tsp baking soda
3 small bananas
1/2 cup coconut milk
1/2 cup honey
2 tbs cold pressed olive oil
1/3 cup chopped almonds (to bake on top)
Preheat your oven to 170 and line a cake tin with baking paper. Set aside while you combine all of the dry ingredients in a medium sized bowl.
In a separate bowl, mash your bananas, whip your eggs and combine with the coconut milk, olive oil, honey and eggs. Once all combined, create a well in the middle of your dry ingredients. Gently fold the mixture together until there are no lumps, then transfer to the cake tin.
Sprinkle the chopped almonds over the top of the loaf and place in the oven for 20-25 minutes. To check if the loaf is ready, simply insert a skewer and if it comes out clean, your loaf is ready.
