Preheat your oven to 170 and line a cake tin with baking paper. Set aside while you combine all of the dry ingredients in a medium sized bowl.
In a separate bowl, mash your bananas, whip your eggs and combine with the coconut milk, olive oil, honey and eggs. Once all combined, create a well in the middle of your dry ingredients. Gently fold the mixture together until there are no lumps, then transfer to the cake tin.
Sprinkle the chopped almonds over the top of the loaf and place in the oven for 20-25 minutes. To check if the loaf is ready, simply insert a skewer and if it comes out clean, your loaf is ready.
