Superfood Fruit + Nut Slab

Here you have it; the result of one peckish gal, waiting for her dinner to cook. I chucked these ingredients together, and wa-lah! I created my new fave choccy. This is the beauty of food! We don't always need to follow recipes. Sometimes our intuition tells us exactly what to add, and it's much more exciting when it ends up tasting divine. I love to grasp an idea from recipes, and then tweak it to my liking. I encourage you to do the same! It's wonderful realising how many nourishing snacks you can create from what is already within your pantry. But back to the point; the chocolate. I prefer mine a little bitter, but if that doesn't float your choccy boat, then feel free to add a lil' more sweetener.

Here's What You'll Need...

1/2 cup cacao butter

1/2 cup cacao powder

1/2 cup goji berries

1/2 cup sultanas

1/2 cup cranberry

1/2 cup macadamias

1/2 cup roasted hazelnuts

4 tbsp coconut oil

1 tbsp peanut butter

1 tbsp raw honey

How To;

Start by roasting the hazelnuts in a small pan on the stove. Simply add the hazelnuts to the pan on a low heat, and give the nuts a shake every so often. You know they are toasted when you can smell their aroma, see them browning and when the shells start to peel off. Place the hazelnuts in a clean tea towel, and roll them roughly together to help remove some of the shells. Next, using the same pot, melt the cacao butter on a low heat, then add the cacao powder, coconut oil, peanut butter and honey. Stir until combined and properly melted, then set aside. In a medium sized bowl, add goji berries, sultanas, cranberries, macadamias and hazelnuts, then pour the chocolate over the top. In a lined tray, pour in the mixture and using a spoon, evenly distribute the choccy towards the edges. Cover with a tea towel, and set in the freezer for a couple of hours. When it has become solid, chop up your slab however you like! The bigger the pieces, the less you have to go back for more...
