Homemade pasta! Of course it is a little more effort to make your own, but it can be super fun when you're in the mood - and have a bottle of red handy, and some great music playing. This is a super simple spelt pasta recipe that might even have you wondering why you've never made your own before!
What You Need:
300g white spelt flour
1 tsp salt
Place flour in a bowl and add the salt. Stir to combine and create a well in the middle. Crack eggs into the middle of the well, and slowly beat the eggs, while gradually combining it with the flour as you go. This will form a dough, which you will need to knead on a lightly floured surface for 5-8 minutes. You are aiming for a dough with a smooth surface - when poked with a finger, it should bounce back up. Roll dough into a small ball, and wrap the dough firmly in glad wrap. Place dough in the fridge for a minimum of 30 minutes. Remove the dough from the fridge and cut the dough into 3 equal portions, rolling each one out with a rolling pin until 2mm in thickness. Once you have reached the desired thickness, take a sharp knife and begin slicing the dough into long strands of equal thickness. Lightly dust the pasta with flour to avoid it clumping. Cook your pasta in boiling salted water for 1-2 minutes, or until al dente!
