Mushrooms + Greens On Toast

Breakfast...if it's not already your favourite part of the morning, I hope this simple recipe can make it so. We're all about starting our day with something simply delicious, and as breakfast is the very first opportunity to fill our bodies with something super nutritious, Vik and I like to jump at every opportunity! I understand not everybody wants to spend too long in the kitchen of a morning, which is why this recipe is great for those of you who find yourself a little tight for time, although are still after something that will satisfy you until lunch. A great quality sourdough is 100% necessary for this recipe, and we totally encourage you to grab it from one of your local cafes or bakers who have made it fresh that day. This breakfast is also great with a fried or poached egg, so feel free to add one for an extra protein hit. This recipe is all about taking simple ingredients and giving them a chance to shine. What You'll Need;

1 large handful baby spinach

1 large handful kale - stems removed

1/2 small leek

1 medium onion

3 Swiss brown mushrooms

Pecorino Romano cheese

1 large garlic clove

1 small sprig rosemary

3 slices sourdough

1 tbsp organic ghee

1 tbsp organic olive oil

salt + pepper to taste

squeeze of lemon

1 pinch dried chilli

How To;

To begin, slice the onion thinly and set aside while you chop the leek and the garlic. Slice the mushrooms into thin even slices using either a mandolin or a sharp knife. Set these aside too, and grab out a medium sized pan and place it over a medium heat, adding the olive oil to the pan. Once the pan is hot, add the onion, garlic and leek, cooking until they are soft and have developed a nice colour. Season with pepper, chilli falkes and a pinch of salt to help soften the onion and add additional flavour. Next add in the spinach, kale, ghee and lemon juice, allowing to cook for 5 minutes, stirring occasionally.

Toast your slices of bread, and place the greens fresh out of the pan onto the toast, covering with fresh mushrooms and grated pecorino. ENJOY!
