1 1/2 cup shredded coconut
1/2 cup cacao powder
1/2 cup coconut oil
3.5 tbsp lakanto sweetener (available at Woolworths and it looks like this)
To get started take out a medium sized bowl and add in the shredded coconut. In a small pan over a low heat on the stove, add the coconut oil, cacao powder and lakanto. Mix well until coconut oil and sweetener have dissolved. Take off the heat and pour into the bowl with shredded coconut. Stir well to combine and pour into a lined baking tray, pressing down the mixture gently with the back of a spoon to even out along the tray. Pop into the freezer for at least 1 hour before slicing into delicious coconutty squares! These coconut roughs are best kept in the freezer.
