Spelt Mixed Berry Muffins

Baking has become a little dangerous for me since spending a big chunk of my days at home recently. How does one possibly make a fresh batch of muffins and resist eating...them all? It's a challenge, I'll tell you...however luckily Vik is home by 3pm and can help me out by eating a few, too! I'm sure Vik still cannot believe that I have finally made something without chocolate for once. This recipe makes 9 fluffy muffins - enjoy!


1 3/4 cup spelt flour

1 tbsp maca powder (optional)

1/2 tsp bi carb soda

2 tsp baking powder

2 eggs

1/2 cup coconut milk

1/2 cup olive oil

1/3 cup raw honey

1/3 cup mixed berries

pinch of salt

Preheat the oven to 170 degrees and line a muffin tray with patty papers. In a large bowl, add the olive oil, coconut milk, honey and eggs and whisk well to combine. Then add all of the dry ingredients and stir thoroughly. Lastly, add in the berries. Portion mixture into patty papers using a large spoon and bake for roughly 20 minutes - until the tops are golden. To ensure they are cooked within, insert a skewer into the middle of a muffin and if it comes out clean, they are ready!
