A dessert that you can make in the time it takes your baby to nap, is a big yes from me! Stewed fruit is such a simple delight, and I love how versatile crumble can be - you don't need to have it with custard or ice cream (although that's got to be my personal favourite). Crumble is also delicious with chia pudding or as a topping on a bowl of warm oats. This recipe is small batch, so for any more than 4 serves I would recommend a double batch!
1/2 cup oats
1/3 cup almond meal
1/3 cup walnuts
6 medjool dates
1 tsp honey
1/2 tsp cinnamon
3 small pink lady apples - peeled and finely chopped
1 pear - peeled and finely chopped
1 tsp cinnamon
Preheat the oven to 160 degrees. Peel the apples and pear and finely dice them. Place in a small pot with 1 tbsp water and the cinnamon, and place over a low heat covering the pot with a lid. Stir the mixture occasionally and when the fruit is soft, remove from the heat. While waiting, add the almond meal, oats, dates, walnuts, honey and cinnamon to a blender or food processor and blend slowly until just combined. You don't want to blend until there is no texture left - a little crunch is what we want! In a small baking dish, add the stewed fruit, then top evenly with the crumble. Roughly chop a small handful of walnuts to sprinkle over the top before baking. Bake for 15-20 minutes until golden brown and crunchy on top.
